Asparagus Zucchini (A-Z) Rice


Ingredients:

  • ½ tbsp canola oil

  • 1 onion, chopped

  • 10 spears fresh asparagus, cut into 2 inch pieces

  • 1 zucchini, sliced

  • ½ tsp dried oregano

  • ½ tsp dried basil

  • ¼ tsp dried thyme

  • 1/8 tsp garlic powder

  • 1 pinch cayenne pepper

  • 2 cups water

  • 1 cup uncooked long grain brown rice


Directions:

  1. Cook brown rice as directed

  2. Meanwhile, in a medium saucepan over medium heat,  melt the butter and saute the onion for about 2 minutes.

  3. Stir in asparagus and zucchini, and saute 5 minutes, or until tender.

  4. Season with oregano, basil, thyme, garlic powder, and cayenne pepper.

  5. Cook and stir until vegetables are coated with the seasonings.

  6. Pour water into the vegetable mixture, and stir in rice.

  7. Reduce heat, cover, and simmer 5 minutes.

  8. Serve and enjoy!
