Black Bean-Smothered Sweet Potatoes 

(2 servings)


Ingredients:

  • 2 medium sweet potatoes

  • 1, 15-ounce can black beans, rinsed 

  • 1 medium tomato, diced    

  • 2 teaspoons  olive oil    

  • ½  teaspoon ground cumin

  • ½  teaspoon ground coriander  

  • ¼  teaspoon salt (optional) 

  • 2 tablespoons reduced-fat sour cream

  • 2 tablespoons chopped fresh cilantro


Directions:

  1. Prick sweet potatoes with fork in several places.

  2. Microwave on high until tender all the way through, about 12-15 minutes OR Bake at 425 degrees in oven until tender all way through, about 1 hour.  

  3. Meanwhile combine beans, tomato, oil, cumin and coriander in medium microwave-safe bowl;

  4. Microwave on high, 2-3 minutes OR heat in small sauce pan over medium heat until just heated through.

  5. When just cool enough to handle, cut each sweet potato lengthwise, press open to make a well in the center and spoon the mixture into the well.

  6. Top each potato with a dollop of sour cream and a sprinkle of cilantro.
