Broccoli Layer Salad with Dried Cranberries

(6 servings @ 1 ½ cups each)


Ingredients:

  1. 8 cups bite-sized broccoli florets

  2. 1 cup thinly sliced red onion

  3. 1/3 cup dried cranberries

  4. 1/3 cup freshly shredded extra sharp or sharp cheddar cheese

  5. ½ cup plain fat-free yogurt

  6. 2 Tbsp. apple cider vinegar

  7. 2 Tbsp. honey

  8. 1 Tbsp. low fat mayonnaise

  9. 2 Tbsp. salt-free sunflower seeds, roasted


DIRECTIONS:

  1. In a large glass bowl, layer the broccoli, onion, cranberries and cheese.

  2. In a small bowl, whisk the yogurt, vinegar, honey and mayonnaise.

  3. Pour the dressing evenly over the salad.

  4. Serve and enjoy!
