Black Bean Salsa Santa Fe

Ingredients:

  • 1 (14 ounce) cans black beans, drained and rinsed

  • 1 cup corn

  • 1/2 onion, finely diced

  • 2 garlic cloves, minced

  • 1 teaspoon chili powder

  • 1/2 teaspoon ground cumin

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped cilantro

  • 1/2 teaspoon salt

  • 1 ripe avocados, cut into 1/2 inch dice

  • 1/2 cup tomatoes, diced


Directions:

  1. In a serving bowl, place the beans and corn.

  2. Add onion, garlic, spices, lemon juice, cilantro and salt.

  3. Toss to combine.

  4. Shortly before serving, add the avocado and diced tomato.
